I found this recipe on the side of a box of Publix bran flakes. It's been adjusted for variation, but still a go-to favorite.
Ingredients
1 egg, lightly beaten
1 cup light buttermilk (1 tablespoon lemon juice, rest low fat milk)
one small applesauce cup
1 3/4 cup bran flakes
1 cup AP flour
1/3 cup packed Splenda Brown sugar
1 tablespoon baking powder
1/2 tablespoon cinnamon
1 cup fruit (blueberry, peach, pear, raisin are some suggestions - Frozen work great, too, just thaw before adding)
Flax seed
Optional: 1/2 cup nuts (pecans, walnut, etc.)
Directions
There is no oil in this recipe, so oil muffin pan or use muffin paper.
In one bowl, mix first four ingredients, let sit for 5 minutes
In other bowl (smaller) combine next four ingredients, then mix with bran flake mixture.
beat on low until combined
fold in fruit and nuts, if using
Use 1/3 cup in dozen muffin pan
bake at 400 degrees for 26 minutes
